Hey loves, happy Monday! Let’s talk about one of my favorite things – salads. I know, I know, some of y’all might be thinking “ugh, salads are boring” but hear me out. Salads can be so delicious and filling if you know how to make them right. And lucky for you, I’ve got some amazing salad recipes to share with you.
First up, we have a salad that is perfect for summer – fruit salad with honey lime dressing. Y’all, this salad is so refreshing and sweet. Not to mention, it’s super easy to make. The honey lime dressing adds the perfect amount of tangy flavor to the sweet fruit. I like to use strawberries, blueberries, pineapple, and mango in my fruit salad but feel free to use whatever fruits you love.
Fruit Salad Recipe
Ingredients:
- 2 cups strawberries, sliced
- 1 cup blueberries
- 1 cup pineapple, diced
- 1 cup mango, diced
- 2 tablespoons honey
- 2 tablespoons lime juice
Directions:
- In a large bowl, combine the strawberries, blueberries, pineapple, and mango.
- In a small bowl, whisk together the honey and lime juice until combined.
- Pour the dressing over the fruit and toss to coat.
- Chill until ready to serve.
Next up, we have a salad that is perfect for any time of year – a Greek salad. This salad is so flavorful and filling thanks to the combination of vegetables, olives, and feta cheese. I like to add grilled chicken to my Greek salad to make it even more filling.
Greek Salad Recipe
Ingredients:
- 2 cups mixed greens
- 1 cucumber, sliced
- 1 tomato, diced
- 1/2 red onion, sliced
- 1/2 cup kalamata olives
- 1/2 cup feta cheese, crumbled
- 2 tablespoons olive oil
- 1 tablespoon red wine vinegar
- 1 garlic clove, minced
Directions:
- In a large bowl, combine the mixed greens, cucumber, tomato, red onion, kalamata olives, and feta cheese.
- In a small bowl, whisk together the olive oil, red wine vinegar, and garlic until combined.
- Pour the dressing over the salad and toss to coat.
- Serve immediately.
