To start, preheat your oven to 375 degrees Fahrenheit and grease a loaf pan with cooking spray. In a large mixing bowl, combine 2 cups of all-purpose flour, 1 tablespoon of baking powder, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper. Next, stir in 1 cup of shredded cheddar cheese, 1/2 cup of grated Parmesan cheese, and 1 tablespoon of chopped fresh parsley.
In a separate bowl, whisk together 1 egg, 1/2 cup of milk, and 1/4 cup of melted butter. Slowly pour the wet ingredients into the dry ingredients, stirring until just combined. Be careful not to overmix, as this can lead to tough bread.
Pour the batter into the greased loaf pan, and bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean. Remove from the oven and let cool in the pan for 10 minutes before slicing and serving.
