In a larger bowl, beat together 2 eggs, 1/2 cup of vegetable oil, 1/2 cup of unsweetened applesauce, and 1 cup of sugar. Add in 2 cups of grated zucchini, 1 teaspoon of vanilla extract, 1 teaspoon of baking soda, 1/2 teaspoon of baking powder, 1/2 teaspoon of salt, and 1 teaspoon of cinnamon. Mix well.
Slowly add in 2 cups of flour and stir until just combined. Pour half of the batter into the greased loaf pan, then sprinkle with half of the cinnamon sugar mixture. Top with the remaining batter and sprinkle with the remaining cinnamon sugar mixture.
Bake for 50-60 minutes, or until a toothpick comes out clean. Let cool for 10 minutes before removing from the pan and slicing. This bread is perfect for breakfast, brunch, or as a sweet treat any time of day.
