What’s good, fam? Today, we’re bringing you a delicious recipe that will transport you straight to the hills of Spain. We’re talking about a homemade Baked Tuna Empanada recipe, or as we say in Spanish, empanada de atún. Our friends over at Spanish Sabores know their stuff when it comes to Spanish cuisine, so we had to share this with y’all.
Ingredients:
- 2 cans of tuna in olive oil (120g each)
- 1 large onion, chopped
- 2 cloves of garlic, finely chopped
- 1 red pepper, chopped
- 2 hard-boiled eggs, chopped
- 1 tbsp of paprika
- Salt and pepper to taste
- 2 sheets of puff pastry
- 1 egg, beaten (for egg wash)
First, preheat your oven to 200°C. In a large skillet, heat up a tablespoon of the olive oil from the tuna can and sauté the onion, garlic, and red pepper for 5-7 minutes until soft. Add in the tuna (make sure to drain off any excess oil from the can) and stir, cooking for another 2-3 minutes. Add in the chopped boiled eggs and stir again. Season with paprika, salt, and pepper to your liking.
While the filling cools, lightly flour a surface and roll out the puff pastry sheets. Cut each sheet in half and spoon the filling onto one half of each rectangle, leaving about a half inch border around the edge. Fold over the other half to create a pocket, then use a fork to crimp the edges closed. Brush the beaten egg over each empanada for a nice golden finish.
Place the empanadas on a baking sheet lined with parchment paper and bake for 20-25 minutes until golden and crispy. Serve hot and enjoy the delicious taste of Spain in your own home!
