– 1/2 cup chopped nuts (optional)
Instructions:
1. Preheat your oven to 400°F (200°C) and grease a 12-cup muffin tin or line with paper liners.
2. In a large bowl, whisk together the flour, sugar, baking powder, cinnamon, and salt.
3. In a separate medium-sized bowl, beat together the eggs, oil, milk, and vanilla extract until well combined.
4. Gradually stir in the dry ingredients until just combined.
5. Fold in the grated zucchini and chopped nuts (if using).
6. Divide the batter evenly between the 12 prepared muffin cups.
7. Bake for 18-20 minutes, or until a toothpick comes out clean when inserted into the center of the muffins.
8. Allow the muffins to cool in the pan for 5 minutes before removing to a wire rack to cool completely.
