  3. Hold the bottom edge of the mat and lift it up and over the filling, using your fingers to tuck in the filling as you roll. Continue rolling until the entire roll is formed.
  4. Use a sharp knife to slice the roll into 8 even pieces. Repeat with the remaining ingredients to make a second roll.
  5. Serve the sushi with soy sauce, wasabi, and pickled ginger for dipping.
