Lemme tell y’all about these soups I been makin’ lately. It all started when I played this game called Breath of the Wild. Now, I ain’t much of a gamer (too busy cookin’ and eatin’), but I gotta admit this game gave me some tasty ideas. See, in the game, you can cook up all sorts of dishes to give you special powers and stuff. And one of the best dishes is this Cream of Vegetable Soup.

Now, I know what y’all thinkin’. “Vegetable soup? That don’t sound too exciting.” But let me tell you, this soup is the bomb. It’s creamy, it’s savory, and it’s got all sorts of delicious veggies in it. You start by sautéin’ some onions and garlic, then you add in carrots, celery, sweet potato, and whatever other veggies you got on hand. Then you let it all simmer in some broth until everything’s nice and tender.

Next, you blend it all up until it’s smooth and creamy. You can use a blender or an immersion blender, whatever you got. Then you add in some heavy cream and seasonings like thyme and rosemary. And that’s it! You got yourself a soup that’s good for the soul.

But wait, there’s more! Another soup from that game that I’ve been lovin’ is the Creamy Heart Soup. Now, don’t let the name fool ya. This soup ain’t made of hearts (eww). It’s actually made with some cute little veggies called heart radishes. They’re these pink radishes that are shaped like hearts, and they’re just as sweet as they are adorable.

You start by cookin’ up some bacon until it’s crispy. Then you sauté some onion and garlic in the bacon fat (don’t judge, it adds tons of flavor). Add in the heart radishes and some chicken broth, and let it all simmer until the radishes are tender.

Ingredients:

2 tablespoons olive oil
1 onion, chopped
2 cloves garlic, minced
3 carrots, peeled and chopped
3 stalks celery, chopped
1 sweet potato, peeled and chopped
4 cups chicken or vegetable broth
1/2 cup heavy cream
1 teaspoon dried thyme
1 teaspoon dried rosemary
1/2 teaspoon salt
1/4 teaspoon black pepper

Directions:

Heat olive oil in a large pot over medium heat. Add onion and garlic, and sauté until softened, about 5 minutes.
Add carrots, celery, sweet potato, and broth to the pot. Bring to a boil, then reduce heat and let simmer until vegetables are tender, about 20 minutes.
Using a blender or immersion blender, blend soup until smooth. Return soup to pot.
Stir in heavy cream, thyme, rosemary, salt, and black pepper. Heat soup over medium heat until warmed through.

Creamy Heart Soup

Servings: 4-6

Ingredients:

4 strips bacon, chopped
1 onion, chopped
2 cloves garlic, minced
1 pound heart radishes, chopped
4 cups chicken or vegetable broth
1 cup milk
1/4 teaspoon nutmeg
1/2 teaspoon dried thyme
1/2 teaspoon salt
1/4 teaspoon black pepper

Directions:

Cook bacon in a large pot over medium heat until crispy. Remove bacon with a slotted spoon and set aside, leaving bacon fat in the pot.
Add onion and garlic to pot, and sauté until softened, about 5 minutes.
Add heart radishes and broth to the pot. Bring to a boil, then reduce heat and let simmer until radishes are tender, about 20 minutes.
Using a blender or immersion blender, blend soup until smooth. Return soup to pot.
Stir in milk, nutmeg, thyme, salt, and black pepper. Heat soup over medium heat until warmed through.
Top with crispy bacon and serve!
