Brothy Garlic Soup Recipe
Ingredients:
- 1 head of garlic, peeled
- 1/2 cup extra-virgin olive oil
- 1 pound grape tomatoes
- 1 tablespoon honey
- 1 teaspoon sea salt
- 1 teaspoon freshly ground black pepper
- 6 cups chicken broth
- 2 cups cooked white beans
- 1 cup fresh parsley, chopped
Instructions:
- Preheat your oven to 375°F.
- Place the peeled garlic cloves in a small baking dish and drizzle with 1/4 cup of olive oil. Roast in the oven for 15-20 minutes, or until golden brown.
- Meanwhile, toss the grape tomatoes with the rest of the olive oil, honey, salt, and pepper. Arrange them on a baking sheet and roast in the oven for 20-25 minutes, or until slightly charred and caramelized.
- In a large pot, bring the chicken broth to a simmer. Add the roasted garlic and tomatoes, along with the cooked white beans. Simmer for 10-15 minutes to allow the flavors to meld together.
