When the enchiladas are done, I take them out of the oven and let them cool for a few minutes. Then I serve them up with the rice, beans, and guac. It’s a complete meal that’s sure to satisfy everyone at the table.
Now, y’all might be thinking, “But where’s the shredded beef?” Don’t worry, I gotcha covered. If you prefer shredded beef in your enchiladas, you can easily substitute it for the ground beef. Just cook a roast in the crockpot until it’s tender and then shred it up. Then use the shredded beef in place of the ground beef in the recipe.
No matter which way you make it, these enchiladas are a crowd-pleaser. They’re great for a weeknight dinner or a weekend fiesta with friends. Plus, they’re so easy to customize with your favorite toppings. Add some jalapeños for extra heat or some sour cream for creaminess. The possibilities are endless!
