2. In a large skillet, cook the ground beef over medium heat until it’s browned. Drain any excess fat.
3. Add the onion and red bell pepper to the skillet and cook for another 3-5 minutes, until they’re softened.
4. Stir in the diced tomatoes (with their juices), enchilada sauce, black beans, corn, chili powder, cumin, salt, and pepper. Let everything simmer for a few minutes to let the flavors meld together.
5. In a 9×13 inch baking dish, spread about a third of the beef mixture over the bottom. Layer half of the torn corn tortillas on top, then sprinkle with half of the shredded cheese. Repeat the layers, ending with the remaining beef mixture on top.
6. Cover the dish with foil and bake for 20 minutes. Remove the foil and bake for another 10-15 minutes, until the cheese is melted and bubbly.
7. Let the casserole cool for a few minutes before serving.

1. Cook the ground beef, onion, and garlic in a large skillet over medium heat until the beef is browned. Drain any excess fat.
2. Add the crushed tomatoes, oregano, basil, salt, and pepper to the skillet. Bring everything to a simmer and let it cook for about 10 minutes so the flavors can meld together.
3. Meanwhile, cook the penne pasta according to the package directions. Drain it and add it to the skillet with the beef mixture.
4. Stir everything together and transfer it to a 9×13 inch baking dish. Sprinkle the shredded mozzarella cheese on top.
