The first recipe is for Ground Beef Fried Rice. This recipe is perfect for a quick and easy weeknight dinner, and it is sure to become a favorite in your household. To make this dish, start by cooking one cup of rice according to package instructions. While the rice is cooling, brown one pound of ground beef in a large skillet over medium-high heat. Once the beef is cooked through, add in one diced onion, one diced bell pepper, and two minced cloves of garlic. Cook for an additional 5-7 minutes, until the vegetables are softened.
Next, stir in the cooked rice, two beaten eggs, four tablespoons of soy sauce, and a teaspoon of sesame oil. Cook for an additional 2-3 minutes, until the eggs are cooked through and everything is well combined. Serve hot, garnished with sliced green onions and sesame seeds.
The second recipe is for Italian Beef and Rice Skillet. This dish is a little more complex than the fried rice, but it is well worth the effort. To make this dish, start by cooking one cup of rice according to package instructions. While the rice is cooking, brown one pound of ground beef in a large skillet over medium-high heat. Once the beef is cooked through, transfer it to a plate and set it aside.
In the same skillet, melt two tablespoons of butter over medium-high heat. Add in one diced onion and cook until softened, about 5 minutes. Next, add in one diced bell pepper, one diced zucchini, and two minced cloves of garlic. Cook for an additional 5-7 minutes, until the vegetables are softened.
Add the cooked rice and ground beef back into the skillet, along with one can of diced tomatoes (undrained), one teaspoon of Italian seasoning, and 1/2 teaspoon of salt. Bring the mixture to a simmer and cook for 5-10 minutes, until everything is heated through and the flavors have melded together.
Serve hot, garnished with chopped parsley and freshly grated Parmesan cheese.
