First up, we have a roasted eggplant recipe that’s perfect for any time of the day. Start by preheating your oven to 400°F. Then, slice your eggplants lengthways and place them cut-side up on a baking tray lined with parchment paper. Drizzle olive oil and sprinkle some salt and pepper over them.
Roast the eggplant in the oven for around 30-35 minutes, or until they’re nicely browned and tender. In the meantime, chop some garlic, coriander, and parsley, and mix them with Greek yogurt. Once the eggplants are ready, transfer them to a serving platter and drizzle some honey and balsamic vinegar over them.
Finally, spoon the yogurt mixture over the eggplants, and enjoy!
If you’re in the mood for something different, we’ve got another recipe for a baked eggplant dish that’s perfect for summer. Start by slicing your eggplants lengthways, and lightly salting them to remove any excess moisture. After leaving them for 30 minutes, rinse the eggplants and dry them with a paper towel.
Heat some olive oil in a pan, and fry some garlic and onion until they’re fragrant. Then, add some tomatoes, sugar, and salt, and let the mixture simmer for around 10 minutes. Meanwhile, brush the sliced eggplants with olive oil, and grill them on a preheated grill for 3-4 minutes on each side.
Once both the eggplants and the tomato sauce are ready, layer the eggplants and the sauce in a baking dish, and sprinkle some grated parmesan cheese over the top. Bake the dish in a preheated oven at 375°F for around 30 minutes, or until the cheese is nicely melted and browned.
