This iconic fermented dish is a staple in Korean cuisine and can be enjoyed at any meal of the day. Ingredients:

  • Napa cabbage
  • Ancient sweet red peppers
  • Kosher salt
  • Garlic cloves
  • Ginger root
  • Red pepper flakes
  • Rice flour
  • Water

Classic Korean Kimchi Recipe

Directions:

  1. Cut the Napa cabbage into small pieces and place them in a large bowl.
  2. Sprinkle the kosher salt over the cabbage and toss to distribute the salt evenly.
  3. Leave the cabbage to sit for 2-3 hours, until it has wilted and reduced in volume.
  4. Rinse the cabbage thoroughly under running water and drain well.
  5. In a food processor, combine the sweet red peppers, garlic cloves, ginger root, and red pepper flakes. Pulse until a rough paste forms.
  6. In a small bowl, whisk together the rice flour and water to form a smooth slurry.
  7. In a large bowl, combine the cabbage, pepper paste, and rice flour slurry. Mix well, making sure that the cabbage is coated evenly with the paste.
  8. Transfer the kimchi to a large airtight container and leave it to ferment at room temperature for 24 hours.
  9. After 24 hours, transfer the container to the refrigerator and continue to ferment for another 4-7 days, until the kimchi reaches your desired level of sourness.
  10. Serve with your favorite Korean dishes and enjoy!
