– 1 Whole Chicken (fresh or frozen)
– 2 tbsp Olive Oil

– 1/2 tsp Dried Thyme
– 1/2 tsp Dried Rosemary
– 1/2 cup Water or Chicken Broth

Next, set your Instant Pot to sauté mode and add the olive oil. Once the oil is hot, place the chicken in the pot, breast side down, and let it cook for 5-7 minutes until the skin is crispy and golden. Then, flip it over and cook the other side for another 5-7 minutes.
Once you’re done with the sautéing, remove the chicken from the pot and add 1/2 cup of water or chicken broth to the pot. This will create steam and help cook the chicken faster and more evenly. Place the trivet (or a makeshift one with aluminum foil) inside the pot and place the chicken on top of it. Close the lid and make sure the vent is set to sealing.
Now, it’s time to let the Instant Pot do its magic! If you’re using a fresh chicken, cook it on high pressure for 6 minutes per pound, plus 15 minutes. For example, if your chicken is 4 pounds, you’ll need to cook it for 39 minutes (6 x 4 = 24 + 15 = 39). If your chicken is frozen, cook it on high pressure for 7-8 minutes per pound, plus 15 minutes.
Once the cooking time is up, let the Instant Pot naturally release the pressure for 10 minutes, then use the quick release method to release any remaining pressure. Open the lid and voila! Your perfectly cooked, juicy and flavorful whole chicken is ready to be devoured.
