We need to talk about this Coconut Rice Pudding. Y’all, I just made it in my Instant Pot and I am in love. It’s the perfect dessert, and it’s so easy to make.
First, let me tell you how I came across this recipe. I was browsing the internet, looking for some new ideas to try out on my Instant Pot. And I came across this amazing post with 101 ridiculously easy Instant Pot recipes. Can you believe that? 101 recipes, all for my favorite kitchen appliance.
But the one that stood out to me was this Coconut Rice Pudding. I knew I had to try it out for myself.
So I gathered all my ingredients and got started. I added some rice, coconut milk, sweetened condensed milk, vanilla extract, cinnamon, and a pinch of salt to my Instant Pot. I mixed it all up, put on the lid, and set the timer for 20 minutes.
And when it was done, oh my goodness. It was absolutely perfect. Creamy, flavorful, and just the right amount of sweetness. I topped it with some shredded coconut and a little more cinnamon, and it was the perfect dessert.
I can’t believe how easy it was to make, too. Just a few ingredients and my Instant Pot did all the work. And the best part is, I have plenty of leftovers for later. It’s perfect for a sweet snack or a quick and easy dessert.
