One of my recent foodie finds has been the incredible sesame salad dressing. It’s a totally vegan option that I’ve come to love, and it’s simplicity in creation makes it a no-brainer addition to my meal prep routine. Here’s how I make it:
First, I gather all of my ingredients. I need 1/2 cup of sesame oil, 1/4 cup of rice vinegar, 1/4 cup of soy sauce, 1 tablespoon of honey, 1 tablespoon of grated ginger, and 1/4 teaspoon of red pepper flakes.
Once I have everything ready, I get to work. I start by whisking together the sesame oil, rice vinegar, soy sauce, honey, and grated ginger in a bowl. I keep whisking until everything is well combined. Then, I add the red pepper flakes and whisk some more.
Next, I store the dressing in a jar and refrigerate it. That allows all of the flavors to blend together before I use it. I’ll usually let it sit for at least an hour, but preferably overnight.
Now for the fun part – the salads! I add all of my favorite ingredients to a bowl, including greens, chopped veggies, maybe a protein like tofu or grilled chicken, and anything else that strikes my fancy. Before serving, I pour the sesame dressing on top, giving it a good stir to make sure everything is coated evenly.
I love how versatile the sesame dressing is. It’s perfect for a light lunch or a side salad, but I’ve also used it as a marinade for grilled veggies and tofu. It’s always a hit with my friends and family, too, who are constantly asking me for the recipe.
