Meatloaf is a classic American comfort food that is loved by many. This recipe from Annabel Langbein, a well-known chef and cookbook author from New Zealand, adds a twist to the traditional meatloaf recipe that will leave your taste buds longing for more.
Ingredients:
- 1kg beef mince
- 2 onions, finely chopped
- 2 cloves garlic, minced
- 1 cup fresh breadcrumbs
- 1 cup milk
- 2 eggs, lightly beaten
- ½ cup chopped parsley
- ½ cup grated parmesan cheese
- 1 tsp salt
- 1 tsp ground pepper
- 1 tsp paprika
- 1 tbsp Worcestershire sauce
- 1 tbsp tomato paste
Preheat your oven to 180°C. In a large bowl, combine the beef mince, onions, garlic, breadcrumbs, milk, eggs, parsley, parmesan cheese, salt, pepper, paprika, Worcestershire sauce, and tomato paste.
Mix everything together well using your hands until all of the ingredients are fully incorporated. Make sure not to over-mix the meat, as it can make it tough and dry.
Line a loaf pan with baking paper and then press the meat mixture into the pan evenly. Bake for 1 hour, or until the internal temperature of the meatloaf reaches 71°C on a meat thermometer.
Herb Fritters with Smoked Salmon

Ingredients:
- 1 cup self-raising flour
- ½ tsp baking powder
- 2 eggs, lightly beaten
- ¾ cup milk
- 2 tbsp chopped fresh herbs (such as parsley, mint, and chives)
- salt and freshly ground black pepper, to taste
- 100g smoked salmon, thinly sliced
- 2 tbsp olive oil
Combine the flour, baking powder, eggs, and milk in a large bowl. Add the chopped herbs and season with salt and pepper. Stir everything together well.
Heat the olive oil in a large non-stick frying pan over medium heat. Spoon tablespoons of the fritter mixture into the pan and cook for a few minutes on each side until golden brown.
Top each fritter with slices of smoked salmon and serve immediately.
