Welcome to our delicious and healthy Low-Sodium Microwaveable Lunch Challenge! We know that as Asians, we love our flavorful meals, but sometimes those flavors come with a high sodium content. That’s why we have put together this challenge to prove that low sodium meals can still be tasty and satisfying!

Our first recipe is an easy Low-Sodium Chicken Salad Sandwich.

For this recipe, you will need:

• 2 cups shredded rotisserie chicken (skin removed)
• 1/2 cup plain Greek yogurt
• 1/4 cup chopped celery
• 1/4 cup chopped red onion
• 1 tablespoon Dijon mustard
• 1 tablespoon honey
• 1 tablespoon lemon juice
• Salt and pepper to taste
• Whole wheat bread and lettuce for serving

To assemble the sandwich, mix together the chicken, yogurt, celery, red onion, Dijon mustard, honey, lemon juice, salt and pepper. Serve on whole wheat bread with lettuce. It’s a quick and easy lunch that’s also low in sodium!

Our second recipe is a delicious and hearty Hot and Sour Soup.

For this recipe, you will need:

• 8 cups of low-sodium chicken broth
• 1/4 cup low-sodium soy sauce
• 1/4 cup rice wine vinegar
• 1 tablespoon cornstarch
• 1 teaspoon chili garlic paste (or more if you like it spicy!)
• 1 teaspoon grated ginger
• 1 teaspoon sesame oil
• 1/2 cup chopped shiitake mushrooms
• 1/2 cup canned bamboo shoots
• 1/2 cup thinly sliced carrots
• 1/4 cup chopped scallions
• 1/4 cup chopped cilantro
• 1 beaten egg

To make the soup, combine the chicken broth, soy sauce and rice wine vinegar in a large pot. Whisk in the cornstarch, chili garlic paste, ginger and sesame oil. Add the mushrooms, bamboo shoots and carrots. Bring to a boil and then simmer for 10 minutes until vegetables are tender. Stir in the scallions, cilantro and beaten egg. Serve hot and enjoy!
