Diabetic Vegetable Soup
Vegetable soup is always a great option for a tasty, healthy meal. This diabetic-friendly recipe is a must-try, and you’ll be sure to come back to it time and time again. The combination of carrots, leeks, tomatoes and celery makes for a flavorful and filling mix.
To start, you’ll need:
- 1/2 chopped onion
- 2 cloves of garlic
- 2 stalks of celery, chopped
- 2 chopped carrots
- 1 chopped leek (only the white part)
- 1 can of diced tomatoes
- 4 cups of chicken or vegetable broth
- 2 tablespoons of olive oil
- 1 teaspoon of dried oregano
- 1 teaspoon of dried basil
- Salt and pepper to taste
Heat olive oil on medium heat in a large pot and add the chopped onion and garlic. Let it cook until the onion is translucent, stirring frequently. Next, add the chopped celery, carrots and leek and let them cook for 5 minutes. Then, add the can of diced tomatoes and chicken/vegetable broth. Season with oregano, basil, salt and pepper to taste and let it cook for 30-40 minutes on low heat.
French Onion Soup
This recipe may seem fancy, but it’s actually really easy to make! The rich caramelized onions combined with the warm broth and melted cheese make for a heavenly combination that will warm your soul.
Ingredients for French Onion Soup:
- 6 large onions, thinly sliced
- 1/2 cup of unsalted butter
- 4 cups of beef broth
- 2 cups of water
- 1/4 cup of dry white wine
- 1/4 teaspoon of thyme
- Salt and pepper to taste
- 4 slices of bread
- 1 cup of shredded Swiss cheese
Melt butter in a large pot on medium heat, add the sliced onions and season with salt and pepper. Cook for 45 minutes to an hour, stirring occasionally, until the onions have caramelized. Add the beef broth, water, thyme, and white wine, and let it simmer for at least 20 minutes.
Preheat your oven to 400°F. Toast the slices of bread and put them into individual oven-proof bowls. Ladle the soup into the bowls and top with the shredded Swiss cheese. Place the bowls on a baking sheet and bake for 10-15 minutes, or until the cheese is melted and bubbly.
