Today, I want to share a delicious recipe with you all that I recently discovered – Tuna Empanadas! These savory pastries are perfect for a quick lunch or dinner and are sure to leave you feeling satisfied.
To begin, you will need to gather the following ingredients:
– 2 cans of tuna
– 1 chopped onion
– 1 chopped bell pepper
– 2 cloves of minced garlic
– 1 chopped tomato
– 1/2 cup of chopped olives
– 1/2 cup of raisins
– 1/2 teaspoon of dried oregano
– Salt and pepper to taste
– Empanada dough (you can make your own or purchase pre-made dough)
First, preheat your oven to 375°F (190°C). In a large skillet, sauté the onion, bell pepper, and garlic until they are soft and translucent. Then, add in the tuna, tomato, olives, raisins, oregano, salt, and pepper. Cook the mixture for about 10 minutes, stirring occasionally.
While your tuna mixture is cooking, roll out your empanada dough into circles (you can use a cookie cutter or a bowl to get the perfect size). Place a spoonful of the tuna mixture onto one side of the dough, leaving enough room around the edges to seal it closed. Fold the other half of the dough over the filling and use a fork to crimp the edges together.
Place the empanadas on a cookie sheet lined with parchment paper and bake for 25-30 minutes, or until golden brown.
When they’re ready, take them out of the oven and let them cool for a few minutes before serving. I like to serve these with a side salad or some steamed vegetables for a well-rounded meal.
