Thanksgiving may have passed, but that doesn’t mean you can’t still enjoy a delicious turkey dinner. This simple ground turkey skillet dinner is the perfect dish to whip up on a busy weeknight – it’s easy, quick, and full of flavor.
Ingredients:
- 1 pound ground turkey
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 can diced tomatoes
- 1 cup quinoa
- 2 cups chicken broth
- 1 tablespoon olive oil
- Salt and pepper to taste
To start, heat the olive oil in a large skillet over medium-high heat. Add the onion, garlic, and red bell pepper, and sauté until softened, about 5 minutes.

Remove the pot from the heat, and let the brine cool to room temperature. Once cooled, transfer the brine to a large bucket or container, and place your turkey in the solution. Make sure the turkey is fully submerged, and let it brine for at least 12 hours, or overnight.
