Fried Zucchini Rounds
These deep-fried zucchini rounds are a classic and for good reason! They’re crispy on the outside and tender on the inside. Perfect as a snack or as a side dish. To make ’em, all you need is:
- 2 medium zucchinis, cut into rounds
- 1 cup of flour
- 1 teaspoon of garlic powder
- 1 teaspoon of onion powder
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
- 1/2 cup of milk
- 1 large egg
- 2 cups of panko breadcrumbs
- Oil for frying
First, mix together the flour, garlic powder, onion powder, salt, and black pepper in a bowl. In another bowl, whisk together the egg and milk. In a third bowl, add the panko breadcrumbs. Dip each zucchini round in the flour mixture, then the egg mixture, then the breadcrumb mixture. Heat up your oil in a skillet or deep-fryer and fry the zucchini rounds until they’re golden brown. Drain on paper towels and serve hot!
Baked Zucchini Fries
If you’re looking for a healthier option, these baked zucchini fries are perfect! They’re crispy and flavorful without all the oil and calories. Here’s what you’ll need:
- 2 medium zucchinis, cut into fries
- 1/2 cup of Italian seasoned breadcrumbs
- 1/4 cup of grated parmesan cheese
- 1/4 teaspoon of garlic powder
- 1/4 teaspoon of dried basil
- 1/4 teaspoon of dried oregano
- 1/4 teaspoon of salt
- 1 large egg, beaten
Preheat your oven to 425 degrees F. Line a baking sheet with parchment paper. In a bowl, mix together the breadcrumbs, parmesan cheese, garlic powder, basil, oregano, and salt. Dip each zucchini fry in the beaten egg, then in the breadcrumb mixture, making sure to coat well. Place the fries on the prepared baking sheet in a single layer. Bake for 20-25 minutes, or until crispy and golden brown. Serve with your favorite dipping sauce!
